Brown 1 (per every 2 persons) SWEET Italian Sausage (skin removed) in a med-hot GLASS lined skillet. Separate and crumble for quick and even browning.
Once browned: add a splash of red cooking wine, using a wooden spatula scrap up all the WONDERFUL tasty brown bits on the bottom of the pan and stir well.
Add:
1/8 t dill seed
pinch red pepper flakes
tiny pinch salt and pepper, remember the sausage has both so a tiny bit goes a long way.
juice of 1/2 FRESH lime, unless it is dry then you and use the other half as well
Mix well and toss with any kind of broccoli you prefer that has been blanched.
To blanch any vegetable simply bring to a boil in a covered skillet 2-3" of cold water. I like to add a good healthy squeeze of FRESH lemon juice for any green veggie. Keeps them bright and happy!
Add the veggies to the boiling water and turn with thongs. DO NOT cover. Allow to boil 2-3 minutes. Remove and immerse in a bowl of ICE water for another 2-3 minutes. Drain.
